This panorama depicts one of their demonstration vegetable gardens. It includes plants rarely seen in an Irish veg. patch, such as the South American Tuberous Nasturtium which produces edible tubers, flowers and leaves and is resistant to many diseases suffered by the potato.
The netting and fleece are for deterring pests. These beds also illustrate "companion planting" where plants are combined in a bed so as to counteract each other's pests. For example the marigold flowers seen here attract hover-flies, whose larvae will eat the aphids that might otherwise trouble the vegetables and the smell of the onions confuses the carrot-root-fly in its hunt for carrots to attack.
There are also plants growing here as "green manure" crops - planted between the edible crops they suppress the weeds and, when dug-in to the ground, they provide sustenance (there's that word again) for the soil.
Elsewhere on the site are poly-tunnels and other demonstration gardens and a cafe, which has tasty healthy food. The produce of this garden provides sustenance for visitors and it is grown in an environmentally sustainable way! So it doubly fits within the theme.
Located just over the border with N. Ireland The Organic Centre provide information and inspiration (another sort of sustenance!) for gardeners, and professional horticulturalists, throughout Ireland.
